How many seats do you actually need
The most common and most expensive mistake in mess-hall planning is buying a seat for every worker. You do not need 200 seats for 200 workers. You need enough seats for the largest single sitting under your actual shift pattern.
Most camps run two sittings per meal, which puts the requirement at 100 to 120 seats for 200 workers, allowing headroom for overlap between sittings. Three sittings brings it down to 70 to 80 seats but compresses your kitchen service window and your wash-up cycle, so it only works if the kitchen is sized for it.
Confirm the shift pattern with the site manager before ordering, and ask specifically about the worst case rather than the norm. A single shift where everyone eats together, such as a rest day or a site-wide stand-down, is what determines whether your mess hall works or overflows.
Table sizes and seats per table
Six-seat tables at 180 by 75 cm are the practical standard for camp and canteen use. They are large enough to be efficient in floor terms, small enough to reconfigure, and they suit the way workers actually sit in groups.
Eight-seat tables reduce table count and cost slightly, but they make the middle seats awkward to access and they are heavy to move for cleaning. Four-seat tables give the most flexible layouts and the highest cost per diner. For most camps, standardising on one six-seat table across the whole hall is the right call, because it makes layout changes trivial.
Bench seating rather than individual chairs is standard in camp mess halls. Benches seat more people per metre, there is nothing to knock over, and cleaning under them is fast. Where you want a step up in comfort, such as staff canteens and school cafeterias, stackable chairs let you clear the floor completely for events and deep cleaning.
Space per diner and aisle clearances
Allow 1.3 to 1.5 square metres per diner in the dining area. That figure includes the table footprint and the circulation around it, but it excludes the servery, the tray-return station and wash-up, which need separate allocation.
Keep main circulation aisles at 1.2 metres minimum, and 1.5 metres where the queue for the servery passes seated diners. Secondary aisles between table ends can drop to 900 mm. Allow 450 to 500 mm of bench length per diner.
Plan the flow as a single loop: entry, servery queue, seating, tray return, exit. When entry and exit share a doorway or the tray return sits next to the servery queue, you get congestion at exactly the moment the hall is fullest, and no amount of extra seating fixes it.
Planning around shift rotations
Shift rotation drives everything. A camp where all 200 workers finish at once needs a very different mess hall from one running staggered shifts across day and night.
Staggered shifts are the operator's friend here. Spreading arrivals across 90 minutes rather than 30 reduces the peak load significantly, which reduces seat count, table count and floor area, and it also relieves pressure on the kitchen and the wash-up.
Do not forget night shift provision. Workers coming off nights still need a meal service, and a small dedicated area or an extended service window is far cheaper than sizing the whole hall for a peak that occurs once a day. Also plan for Fridays and rest days, when the pattern collapses toward a single large sitting.
Furniture that survives canteen use
Mess-hall furniture takes more abuse than any other furniture on a camp. It is used two or three times a day, wiped down after every sitting, and cleaned with commercial chemicals.
Specify welded steel frames rather than bolted, because bolted table frames work loose within months under daily wiping and moving. Specify commercial laminate tops with a replaceable edge, so a scratched or scorched surface is a top swap rather than a new table. Confirm that the tops themselves can be replaced on the same frame, which is the single most useful durability feature in a canteen and the one most suppliers do not mention.
Adjustable feet are worth insisting on. Mess-hall floors are rarely level, and a table that rocks gets shimmed with cardboard within a week. Finally, standardise: one table model and one bench model across the whole hall means every replacement fits and your spare tops are interchangeable.
